Simple Grilled Chicken With Caesar Salad

I’ve been a fan of Kewpie Roasted Sesame Dressing for some time and decided to try out their Caesar Salad Dressing. I usually prefer to make my own salad dressings, but I find it difficult to source good quality anchovy paste for a reasonable price. So I’ll make an exception for this recipe and will use bottled dressing.

I used 500g of Chicken Breasts. Wash, dry, and cut them into thin or bite-sized pieces.

To prepare the marinade I used:

  • 1/4 cup of olive oil
  • 1/2 juice of lemon
  • 2 tbsp dijon mustard
  • 1 tsp chopped rosemary
  • 1 tsp oregano
  • 2 pieces garlic, minced
  • 3/4 tsp ground black pepper
  • 3/4 tsp salt
  • 1 tbsp honey

Stir all the ingredients in a mixing bowl, and toss in the pieces of chicken. Mix well so all the chicken pieces are covered. Seal the mixing bowl with a plate or a sheet of cling-film, and place in the fridge for 45 minutes.

Meanwhile, start preparing the croutons. Slice and dice 4 pieces of wholemeal bread and place into a second mixing bowl. Add to it:

  • 1/4 cup of olive oil
  • 2 tsp oregano and/or any other italian herbs
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Mix well.

Place ingredients into the air fryer (or preheated oven) at 200C for 15 minutes.

Meanwhile, remove the root of one or two pieces of Romaine Lettuce. Then slice across so you gets strips of lettuce.

Wash and dry the leaves. 

Heat up a pan with a little oil and grill the chicken pieces. When then bottom starts to get brown (but not burnt) turn over.

Next bring out the salad dressing. I prefer to buy the larger, 1L bottle, as the little ones hardly last me more than twice.

Now we are ready to assemble our salad.

  • Start with the salad leaves
  • Pour in some caesar salad dressing
  • add in some croutons
  • add in some grilled chicken pieces
  • (Optionally) some grated parmesan cheese

Toss the whole lot together.

Transfer to a bowl and there you have it, a simple Grilled Chicken Caesar Salad!
